Brown Pasta

- 500g beef mince
- 1 onion
- 1 habanero chilli
- 400g canned tomatoes
- Splash of red wine
- 250g pasta
- Grated cheese, to serve
- Olive oil
Brown Pasta
- Brown mince in a hot pan with a little oil — don't crowd it, you want colour not steam.
- Add diced onion and chilli. Cook down until soft.
- Add the wine and let it reduce for a minute.
- Add the canned tomatoes, break them up. Season well.
- Simmer 20–30 minutes until the sauce thickens.
- Cook pasta in salted boiling water, drain, and serve topped with sauce and grated cheese.
