Brown Pasta

  1. Brown mince in a hot pan with a little oil — don't crowd it, you want colour not steam.
  2. Add diced onion and chilli. Cook down until soft.
  3. Add the wine and let it reduce for a minute.
  4. Add the canned tomatoes, break them up. Season well.
  5. Simmer 20–30 minutes until the sauce thickens.
  6. Cook pasta in salted boiling water, drain, and serve topped with sauce and grated cheese.
